Cook your way through quarantine

Have you tried every variation of grilled cheese in the book and still crave more? Have you feasted on butter noodles for the past four nights in a row? Try out some new recipes with The Beacon.

As the days in quarantine stretch on, it can be quite hard to find an activity that is both enjoyable and productive. It can also be difficult to find meal options that are both healthy and easy to make. The list below has a few easy cooking options that can be made with just a few ingredients.

For those who do not have access to many different foods, the app and website SuperCook is another good way to find things to make. Simply enter all the ingredients you have available in the app and it will find recipes that you can make with just those items. 

  1. Chocolate Mug Cake

  • Difficulty: Easy

  • Time: 10 minutes

  • Servings: 1

  • Tips: Extra salt and chocolate powder are recommended but not required.

  • Chicken Lazone 

    • Difficulty: Easy

    • Time: 20 minutes

    • Servings: 4

    • Tips: To complete the meal, chicken should be served with pasta or mashed potatoes. (Instant mashed potatoes are easy and cheap and can be found at Fred Meyer)

  • Pinwheels

    • Difficulty: Intermediate

    • Time: 20 minutes

    • Servings: 20 pinwheels per 1 pack of crescent rolls

    • Tips: Pinwheels can be made with many different types of filling and toppings. For example, switch out tapenade for jam and parmesan for sugar to make them sweet.

  • Vegan Mac and Cheese

    • Difficulty: Intermediate

    • Time: Variable

    • Servings: 4-6

    • Tips: Be sure to soak the cashews for a few hours before beginning, as this is where the sauce’s creaminess comes from.

  • Tortellini Pasta Salad

    • Difficulty: Intermediate

    • Time: 20 minutes

    • Servings: 4-6

    • Tips: This pasta salad can be easily changed depending on personal preference. The link above has many suggested changes to the recipe that can be made if needed.

  • Pina Colada Pancakes

    • Difficulty: Intermediate

    • Time: 15-20 minutes

    • Servings: 4

    • Tips: If you cannot find pineapples at the grocery store, canned pineapples will work just as well and will be easier in preparation.

  • Crispy Cheese Pan Pizza

    • Difficulty: Hard

    • Time: Variable (very long)

    • Servings: 10” pizza

    • Tips: Though this recipe takes a while to make, it is not that difficult skill-wise. It was also King Arthur Flour’s 2020 Recipe of the Year. Check out some of the notes in the link above that will help you be fully prepared for taking on this dish. 

  • Kindred's Milk Bread

    • Difficulty: Hard

    • Time: Variable: 3 hrs 30 min

    • Servings: 6 rolls, 2 loaves, or 12 buns

    • Tips: This bread can be used for anything. Be sure to think about what you want to do with it before cooking it!
